Minestrone Soup

Today is Homemade Soup Day – can you guess what’s for dinner?

I can keep all the ingredients on hand (except the spinach- which is optional). And it cooks up quick, which is very important for my busy family. It is a complete meal in one bowl.

Quick Minestrone Soup

1 – 16 oz. can kidney beans, rinsed and drained
1 – 14.5 oz. can Italian diced tomatoes
1 cup uncooked pasta noodles
1 – 14.5 oz. can sliced carrots, drained
2 cups fresh spinach, chopped (optional)

 

Combine first four ingredients in a large pot. Cover. Bring to a simmer, and cook for 8-10 minutes stirring occasionally.  Add carrots and spinach. Cook an additional 3 minutes. Remove from heat and serve immediately.

TIPS: Italian diced tomatoes contain garlic, basil and oregano. It is okay to use store bought chicken stock. I did for many years (and occasionally still do). I prefer to use a small pasta in this recipe such as shells or bowtie pasta.
