The secret ingredient is pineapple, it gives it sweetness while remaining very healthy. It truly is a dish that I can serve without any guilt.
Carrot and Raisin Salad
3 cups finely grated carrots (about 1 pound)
1/4 cup raisins
2 Tablespoons low-fat mayonnaise
1 8 oz can unsweetened crushed pineapple drained
Combine all ingredients and mix well. Refrigerate at least one hour, or until ready to serve.
