Kale chips, not just for health nuts.

Do you like Kale chips? Have you even tried them?

Recently I have been trying to eat a little healthier. Don’t worry, I am not turning into some crazy health nut. I recently discovered kale. Until about six or seven month ago, I had never eaten kale. Now, my kids can not get enough of it.  Our favorite, and the only way I’ve really tried it, it baked into kale chips.

When baked in the oven for about 20 minutes they lose their bitterness and create a wonderfully salty snack with a unique texture. And they contain tons of nutrients.

Corn and Black Bean Relish

While some days I enjoy spending time in the kitchen, other days I love quick and easy. Right now is time for quick and easy.

Corn and Black Bean Relish is a family favorite. It goes great as a side to quesadillas, as an appetizer, or as party food. And with five ingredients you can’t go wrong.

Peanut Butter Fudge

Tomorrow, March 1st, is National Peanut Butter Lover’s Day. I have to admit that I crave peanut butter, the only problem is that I have found the peanut butter triggers my migraine headaches so I try to resist whenever I can. Peanut Butter Fudge can really test the limits of my will-power. However, my family loves it and I so usually I will make it along with my chocolate fudge (recipe found here).

Sugar on a stick

Last year for the AHG Father/Daughter Dance I made chocolate covered marshmallows. This year our new troop in Florida also had a Father/Daughter Dance. Each family was asked to bring something to share. I asked my  husband what he wanted and HE picked chocolate covered marshmallows. However, I hate to do the same thing twice…

Besides the different colored sprinkles, I also designed a stick topper inspired by the valentine conversation hearts. Continue reading “Sugar on a stick”

Hamburger Vegetable Soup

For all you foodies out there, yesterday was National Homemade Soup Day. On a cold winter day, nothing is better than a bowl of homemade soup.

hamburger vegetable soup

A family favorite around my house is Hamburger Vegetable Soup. It has enough meat to keep the hubby happy and lots of vegetables (carrots, corn, green beans, peas, and celery). I love the recipe because I can throw it in the slow-cooker and have dinner on the table when the hubby gets home from work.

HAMBURGER VEGETABLE SOUP

1 lb. of ground beef – browned

2 cups water

6 beef bouillon cubes

1 large can (28 oz) crushed tomatoes

1 small onion diced

1/2 cup diced celery

1 10oz package of frozen mixed vegetables

1 clove of garlic minced

1 teaspoon of oregano

1/8 teaspoon of pepper

Dissolve bouillon in water. Add all ingredients to slow cooker. Cover and cook on low for 5 hours.

The next time the weather is cold and rainy, mix up a batch of Hamburger Vegetable Soup and stay warm.

Here is the recipe card (Hamburger Vegetable Soup)  to add to your collection.
