Peanut Butter Fudge

Tomorrow, March 1st, is National Peanut Butter Lover’s Day. I have to admit that I crave peanut butter, the only problem is that I have found the peanut butter triggers my migraine headaches so I try to resist whenever I can. Peanut Butter Fudge can really test the limits of my will-power. However, my family loves it and I so usually I will make it along with my chocolate fudge (recipe found here).

Owl Always Be Your Friend

Before February is over, I wanted to share one last Valentine’s Day idea with you. While I realize that you will not need the idea any time soon, maybe you could pin it unto Pinterest so you can find it next year when you do need it. Or maybe you will find it while searching the internet.

My daughter’s AHG troop exchanged Valentine’s within her unit. We loved this, for as a homeschooler we have not regularly exchanged Valentine’s among friends and classmates. Instead of the regular store-bought cheesy cards, we opted to make some. In my search I have found several ideas that involved wrapping a box of confectionary hearts but none of them seemed right for us. So I was determined to make one that she liked.

Sugar on a stick

Last year for the AHG Father/Daughter Dance I made chocolate covered marshmallows. This year our new troop in Florida also had a Father/Daughter Dance. Each family was asked to bring something to share. I asked my  husband what he wanted and HE picked chocolate covered marshmallows. However, I hate to do the same thing twice…

Chocolate Marshmallows

OH MY!!! I had no idea how good these were going to be. Yes, I know that chocolate is the answer to all of life’s questions and nothing beats a marshmallow when a sugar craving hits, but who knew these were all that. I could have eaten the whole batch.

Thankfully for my daughter, we made these for her to take to a Father/Daughter Dance with her American Heritage Girl Troop so I was able to contain myself. I had seen these over at Pinterest (my favorite site) but had never actually made them. I figured it could not be that hard so I gave it a try.

The concept seems pretty easy – insert stick, dip in melted chocolate and cover in sprinkles. However, I did learn a few thing.

1) Inserting the craft stick is harder than it seems. To overcome this, I used a toothpick. I inserted the toothpick all the way through the marshmallow first then inserted the stick. The toothpick became quite gummy so for the batch I used a bunch of toothpicks.

2) You don’t want the chocolate to pool at the bottom of the marshmallow when they are drying. This takes a little patience to allow the chocolate to drain back into the dipping bowl before you put sprinkles on them. This also made these take longer than anticipated.

3) This used a LOT of sprinkles. While I realize my daughter was the one putting the sprinkles on more sprinkles is always better, so next time I need a new bottle before I make these.

Chocolate Fudge

What would Christmas be without fudge! Fudge is one of those food that everyone has an opinion on.

  • nuts vs. no nuts (no nuts allowed in my fudge)
  • milk chocolate vs. semi-sweet (semi-sweet gives it a richer chocolate taste)
  • microwave vs. stove top (stove top – it has yet to fail me).

adapted from “Jim’s Cat Daddy Fudge” recipe
1 small jar marshmallow creme
1  1/2 cup sugar
5 oz evaporated milk
1/4 cup un-salted butter
1/4 teaspoon salt
1 teaspoon vanilla
12 oz bag of semi-sweet chocolate chips

Combine marshmallow creme, sugar, milk, butter and salt in a large sauce pan. Bring to a full boil stirring constantly over medium heat. Boil for 5 minutes, stirring constantly. Remove from heat. Stir in chips until melted and mixture is smooth. Stir in vanilla. Pour into a 8×10 pan lined with foil. Allow to set at room temperature for 2 hours before cutting into small squares.

Tips for making fudge
  • Stir constantly it will burn very easily
  • Semi-sweet chips give it a richer flavor

Lily B loves helping me in the kitchen. Her job is to stir the fudge constantly and not let it burn.
