Blueberry Cobbler
I remember as a girl, growing up in Michigan, picking wild blueberries near our house. My friends and I would set out armed with old butter tubs. What we did not eat was brought home. My mom would save them up until we had enough to do something with, usually it was blueberry pancakes but on occasion she would make blueberry cobbler.
Bell Pepper Casserole
Several years back when I had a garden I grew bell peppers. The only problem is they never got very big. I had grand plans of making stuffed bell peppers with them. So I created this dish. It is all the flavor of stuffed bell peppers in a casserole form.
Since then, I have not made true stuffed bell peppers. This recipe is so much easier, I will never go back.

Carrot and Raisin Salad
Do you remember the carrot and raisin salad Chick-Fil-a used to have on their menu? I miss it so. My recipe for carrot and raisin salad is very reminiscent of that. The secret ingredient is pineapple, it gives it sweetness while remaining very healthy. It truly is a dish that I can serve without any guilt.
