Looking for a quick and easy meal during this busy time of year. Try sweet and Sour meatballs. In the time it takes to cook rice you can have a complete meal.
I begin with pre-made meatballs that I keep in the freezer (recipe here), or you can purchase meatballs in the freezer section.
SWEET AND SOUR MEATBALLS
1 – 15 oz can pineapple chucks
1/3 cup cold water
1 Tablespoon soy sauce
3 Tablespoons corn starch
1 large green pepper cubed
3 Tablespoons white vinegar
1/2 cup brown sugar
30 meatballs thawed
Drain pineapple. Add enough water to juice to make 1 cup.
In a large skillet, mix 1 cup reserved juice, an additional 1/3 cup water, vinegar, soy sauce, brown sugar and corn starch. Stir until smooth. Cook on low heat until it starts to thicken.
Add pineapple chucks, meatballs and bell pepper. Simmer for about 20 minutes until meatballs are heated through.
Serve over rice.
