Strawberry cobbler

Summer may be over but we can still enjoy the taste of summer all year long.  Try this strawberry cobbler

STRAWBERRY COBBLER
3 cups frozen whole strawberries, thawed
1  1/4 cup sugar – divided
3/4 cup all-purpose flour
3/4 cup milk
2 teaspoons baking powder
1 stick butter or margarine (1/2 cup)

Melt butter in the bottom of an 8×8 inch baking dish.

In a separate bowl, combine 3/4 cup sugar, flour, milk and baking soda until all lumps are gone. Slowly pour into butter evenly over the bottom of the pan. DO NOT STIR.

In a new bowl combine thawed and drained strawberries with the remaining 1/2 cup of sugar.  Pour strawberries into the baking dish. DO NOT STIR.

Bake at 350 for 55 minutes, or until golden brown.

TIP: You can use fresh strawberries when they are in season.
