Orange Eggnog Bread

Today is National Eggnog Day! Whether you drink it straight or with a little rum, it is a Christmas staple.  My parents even mixed it with Coca-Cola.  Eggnog can also be used to flavor this delightful quick bread.

Orange Eggnog BreadORANGE EGGNOG BREAD
2   1/4 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
2 eggs
1 cup sugar
1 cup eggnog
1/2 cup margarine melted
1 teaspoon orange extract
1 teaspoon orange zest

In a bowl stir together flour, baking powder, salt and nutmeg.

Using an electric mixture beat eggs for 30 seconds. Add sugar, eggnog, margarine, extract and orange zest. Blend well. Slowly add dry ingredients.

Grease the bottom of a 9×5 loaf pan. Pour mixture into the pan and bake at 350 for 45-50 minutes or until a toothpick comes out clean.
