Peanut Butter Fudge

Tomorrow, March 1st, is National Peanut Butter Lover’s Day. I have to admit that I crave peanut butter, the only problem is that I have found the peanut butter triggers my migraine headaches so I try to resist whenever I can. Peanut Butter Fudge can really test the limits of my will-power. However, my family loves it and I so usually I will make it along with my chocolate fudge (recipe found here).

Owl Always Be Your Friend

Before February is over, I wanted to share one last Valentine’s Day idea with you. While I realize that you will not need the idea any time soon, maybe you could pin it unto Pinterest so you can find it next year when you do need it. Or maybe you will find it while searching the internet.

My daughter’s AHG troop exchanged Valentine’s within her unit. We loved this, for as a homeschooler we have not regularly exchanged Valentine’s among friends and classmates. Instead of the regular store-bought cheesy cards, we opted to make some. In my search I have found several ideas that involved wrapping a box of confectionary hearts but none of them seemed right for us. So I was determined to make one that she liked.

Hamburger Vegetable Soup

For all you foodies out there, yesterday was National Homemade Soup Day. On a cold winter day, nothing is better than a bowl of homemade soup.

hamburger vegetable soup

A family favorite around my house is Hamburger Vegetable Soup. It has enough meat to keep the hubby happy and lots of vegetables (carrots, corn, green beans, peas, and celery). I love the recipe because I can throw it in the slow-cooker and have dinner on the table when the hubby gets home from work.

HAMBURGER VEGETABLE SOUP

1 lb. of ground beef – browned

2 cups water

6 beef bouillon cubes

1 large can (28 oz) crushed tomatoes

1 small onion diced

1/2 cup diced celery

1 10oz package of frozen mixed vegetables

1 clove of garlic minced

1 teaspoon of oregano

1/8 teaspoon of pepper

Dissolve bouillon in water. Add all ingredients to slow cooker. Cover and cook on low for 5 hours.

The next time the weather is cold and rainy, mix up a batch of Hamburger Vegetable Soup and stay warm.

Here is the recipe card (Hamburger Vegetable Soup)  to add to your collection.

Chocolate Cloud Cake

Do you have that one go to dessert that makes a bad day better? I do! Let me introduce you to my secret… Chocolate Cloud Cake

CHOCOLATE CLOUD CAKE

A girl-friend brought me my first Chocolate Cloud Cake one day after I had eye surgery. My family was away for the weekend and I managed to eat the WHOLE THING before they returned. I knew I had to get her recipe. When I did, I realized how simple it was and could not have been happier. Are you ready? Continue reading “Chocolate Cloud Cake”

Ambrosia

Living in Florida and having wonderful neighbors means more oranges than I can use.  It seems that every couple of days they show up with another bag of oranges. While it has helped my grocery budget because I am not buying as much fruit, the kids are getting tired of them.  The solution – Ambrosia.

What is ambrosia you ask… According to Wikipedia it is a food of the Greek god’s that confers immortality to whoever eats it. While by no means will I claim that it gives immortality, I know it is loaded with Vitamin C.

ambrosia

Ambrosia has been a family favorite at Christmas time at my house for many years. My mother even had a special bowl we always put the ambrosia in. While I am not held to tradition, we have eaten several large bowls of ambrosia lately. It is a quick fruit salad to put together. Continue reading “Ambrosia”
