Do you ever have bananas that have been forgotten after sitting on the counter for one too many days? At my house they go into the freezer. They are then added to smoothies for the kids- or for an extra special treat, I make banana bread.

Minestrone soup is a favorite around here. This super quick recipe has become a staple during winter months. I can keep all the ingredients on hand (except the spinach- which is optional). And it cooks up quick, which is very important for my busy family. It is a complete meal in one bowl.
