Apples make a great year round dessert. While they are often found in the fall, they are an affordable fruit all year. Next time you need a quick comforting dessert the whole family will enjoy, try this Apple Cake Recipe.
APPLE CAKE
1 1/2 cup sugar
3/4 cup shortening
1 1/2 teaspoon vanilla
2 eggs
2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
3 cups chopped peeled apples
In a large bowl, beat sugar, shortening and vanilla until fluffy. Add eggs, one at a time, beating well after each addition. In a separate bowl combine dry ingredients (flour, baking powder, salt and cinnamon). Add flour mixture to creamed mixture alternating with milk. (Begin and end with flour). Stir in apples. Pour into a greased 9×13 cake pan. Bake at 300 for 60-70 minutes or until golden brown and it begins to pull away from the edges.
CARAMEL TOPPING
1/2 cup brown sugar
1/4 cup margarine
1/4 cup milk
In a small saucepan, combine all topping ingredients. Bring to a boil over medium heat. Boil 2 minutes, stirring frequently. Pour over warm cake.
