Corn Casserole


The holiday season is a time for casseroles.  One of my family’s favorite is corn casserole.


  • 1/2 cup melted butter
  • 2 eggs
  • 1 (8.5 oz) box of Jiffy Corn bread mix
  • 1 (8 oz) carton of sour cream
  • 1 (15 oz) can whole kernel corn
  • 1 (15 oz) can cream corn

Mix all ingredients together.  Pour into lightly greased 9×13 dish.  Bake at 350° for 45 minutes to 1 hour.

TIPS: While other brands of corn bread mix will work, we love the sweetness Jiffy provides.  You can lighten the recipe by substituting fat-free sour cream (or low-fat plain yogurt).
