Lemon Verbena Shortbread Cookies

lemon verbena cookiesOn a recent trip to the Spice and Tea Exchange, I had my daughter pick a new spice to add to our collection.  She picked Lemon Verbena.  Lemon Verbena has a smell reminiscent of tea with a lemony note.

When we got home we decided to add them to a traditional shortbread recipe to create Lemon Verbena Shortbread Cookies.  I wanted to share this recipe with you.

LEMON VERBENA COOKIES
1/2 cup granulated sugar
1 cup unsalted butter, softened
3 Tablespoon lemon verbena
2 teaspoons lemon zest
3 Tablespoon lemon verbena
2 cups all-purpose flour
1 Tablespoon lemon juice
1 Tablespoon raw sugar

Begin by crushing the lemon verbena with a small amount of sugar, either in a food processor or with a mortar and pestle.

Using an electric mixer combine sugar, verbena, butter and lemon zest until mixed completely (3-5 minutes). Add flour just till combined,

TIP: One lemon usually gives me enough zest for this recipe.
