The shrimp cook up quickly which makes for an easy weeknight meal. This pairs well with strawberry mango salsa. The recipe below make enough for 8-10 soft tacos. Here I added lettuce, salsa and sour cream. The only thing that would have made this better was if I had something besides iceberg lettuce in the fridge.
SHRIMP FOR SHRIMP TACOS
3/4 lb medium shrimp, peeled and deveined
1/2 teaspoon smoked paprika
1/4 teaspoon cumin
1/4 teaspoon cayenne pepper
1 Tablespoon butter
1 Tablespoon lemon juice
Toss shrimp in seasoning mixture (smoked paprika, cumin and cayenne pepper) and set aside. In a large skillet, melt butter. Add shrimp and cook just until done, turning half-way through. Remove from heat and add lemon juice.
TIP: Shrimp cook very quickly. Total cooking time will be approximately 5 minutes.
