Triple Chocolate Pound Cake

I am a sucker for desserts, especially chocolate.  One of my favorite “go-to” desserts is this Triple Chocolate Pound Cake.

Triple Chocolate Pound Cake


1 box chocolate fudge cake mix
1 (3.4 oz) box instant chocolate pudding mix
1/2 cup flavored, sweetened instant coffee
4 eggs
1 cup sour cream
1/2 cup vegetable oil
1/2 cup water
1 (10 oz) bag semi-sweet chocolate chips.

Pre-heat oven to 350. Lightly grease and flour a bundt pan.

Using an electric mixer, combine all ingredients until well blended (about 2 minutes). Add chocolate chips and stir until combined.

Pour batter into bundt pan and bake 55 minutes (or until a toothpick inserted in the center comes out clean).  Cool in pan 10 minutes before removing the cake from the pan.

Serve warm or at room-temperature.

TIPS: I use Swiss-Mocha flavored General Foods International Coffee. Any type of chocolate cake mix will work, but the richer the better. This makes a great breakfast the next morning, just warm in the microwave before serving.
