Guacamole

One of my favorite sides with Mexican food is guacamole. It seems that everyone has their own take on the matter, I prefer mine smooth and creamy. My aunt gave me her recipe that is so easy my children make it, and have made it by themselves for several years.

Guacamole is made with 4 simple ingredients, avocado, lemon juice, garlic salt and onion powder. Here is the recipe card for you to print Guacamole. 

GUACAMOLE
1 large ripe avocado
1   1/2 t lemon juice
1/4 t garlic salt
1/2 t onion powder
Combine all ingredients in a small bowl and mash with a fork until smooth.

Being a frugal person, I do not purchase garlic salt but make my own. To make garlic salt combine 1 part garlic powder with 2 parts table salt. I store the mixture in an old spice jar and use it when ever a recipe calls for garlic salt.

National Gumbo Day

As the weather is starting to turn cooler and we are longing for something warm and comforting, gumbo is the perfect dish. Gumbo is a hearty stew-like dish loaded with flavor, and a little bit of spice, served over a bowl of steaming hot rice. I have shared my recipe in January (here). Gumbo has always been a sore subject at my house. I grew up eating gumbo with okra. My husband detests okra. Not only does he not like the texture of boiled okra, he also hates the taste and will not even eat fried okra. So, for most of our marriage I made it without. But it was never quite right. My husband knowing how much I missed okra finally agreed to let me add it. Since then, he has come to accept okra and has encouraged me to make it with okra ever since.

Pancakes, it’s whats for dinner

Recently we went and picked a gallon of blueberries. Blueberries are one of my favorite fruit. And they are easy to store for later use.

To freeze fresh blueberries, place on a cookie sheet covered with wax paper and place in freezer for 4 hours. Then move to zipper storage bags for later use. When you are ready to use them, then you wash them. It is important not to wash them before hand.

After picking blueberries we came home and made blueberry pancakes. I know that there are lots of different ways to make blueberry pancakes. I have found that if you add the blueberries directly into the batter the last pancakes cooked not have many berries. And if you stir the batter to much then they tend to break up and the batter turns a funny off-gray color. To avoid these problems I make my plain batter, then after I have poured the pancakes onto the griddle I add the blueberries.

BLUEBERRY PANCAKES
2   1/2cup all-purpose flour
1/4 cup sugar
4 teaspoons baking powder
1 teaspoon baking soda
2 eggs beaten
2 cups milk
2 Tablespoons vegetable oil
2 teaspoons lemon juice
2 cups blueberries

Combine dry ingredients. In a separate bowl blend wet ingredients. Add wet ingredients to dry ingredients. Stir until blended (batter will be slightly lumpy).
Pour 1/3 cup of batter onto heated griddle or non-stick skillet. Add a hand-full of berries to each pancake. Turn pancakes over once the edges begin to dry out and the bottoms are golden.

Sloppy Joes

Here’s a family favorite for you. Sloppy Joes! This is an easy meal to make that does not involve heating up the kitchen during the hot summer months.

SLOPPY JOES

1 lb ground beef

1 can condensed tomato soup

2 Tablespoons ketchup

1 teaspoon yellow mustard

4-6 hamburger buns

 
In a skillet brown ground beef until no longer pink, crumbling it as you go.
Once done add soup, ketchup and mustard and heat through.
Serve on hamburger buns.*Recipe makes between 4-6 sandwiches depending upon the size of the bun and how full you fill them.
