While some days I enjoy spending time in the kitchen, other days I love quick and easy. Right now is time for quick and easy.
Corn and Black Bean Relish is a family favorite. It goes great as a side to quesadillas, as an appetizer, or as party food. And with five ingredients you can’t go wrong.

AHG merit badge Special Delivery focus on stamp collecting. I know philately is not cool to some most people, but Lily has enjoyed working on this merit badge. It allowed her to connect to her grandpa in a new way. She is currently working on this badge.
Requirement number seven looks into the story behind each stamp. She is to select 10 stamps and write the story depicted on each. If you are working on this requirement start by printing the file below twice.
After selecting ten stamps, head to www.arago.si.edu. “Arago is your resource to the study of philately and postal operations as seen through the eyes of the National Postal Museum.” The search option allows you to learn more about each stamp, including the issue date and location. It also tells the history behind the stamp.
Green Stuff
Have you ever seen a recipe, and thought “NO WAY”. Well, today I would like to share one of those type recipes. Growing up, my mom made a green gelatin salad every year for Christmas. Thankfully as a kid I did not realize what was in it, or I may not have eaten it. Cottage cheese and lime jello, are not a combination I would have tried.
We called it “green stuff”. When my mom gave me the recipe before I got married the recipe card said “green stuff”. I guess it is because my sister and I could not pronounce the word congealed or gelatin, who knows. But to help you I will call Green Gelatin Salad.
I’m not sure why we only had it at Christmas, I think it goes great for St. Patrick’s Day. I have found that green deserts are a little hard to find.
King Cake
Mardi Gras has come and gone once again. And the remains of the King Cake are almost gone. King Cake is not only a great dessert, it also makes a delightful breakfast. The only problem is Fat Tuesday, leads to Fat Wednesday, Fat Thursday, Fat Friday… you get the picture. This is not a light, diet-friendly recipe. But then again, you only live once and Mardi Gras is only once per year.
