Not only can I not spell pfeffernuese, some days I have a hard time pronouncing it.
I first learned of pferffernuesse when my dad was stationed in Germany with the Air Force. I absolutely love these little spice cookies. Unlike the traditional cookies, I dip mine in a glaze. This adds a little extra sweetness.
This time of year everyone is busy making cookies. While I like the traditional cookies, I also like to add some not so traditional cookies to my mix. With the help of my hubby, I modified my regular chocolate chip cookie recipe to make White Chocolate Cranberry Cookies. These are a year round hit, but at Christmas time we get to count them as healthy because they have fruit in them.
Every year I make a ton of Christmas cookies. What my family does not consume goes to the neighbors, my husband’s office or Christmas parties. One of my favorite things to make each year is Peppermint Marshmallows.
I grew up eating Cranberry Jelly – you know that gelatinous stuff from a can. It was a staple at my house as a kid and I hated it. Twice a year my mom pulled out a special crystal dish, that was only used for cranberry sauce.
Fast forward some 30 plus years and I’m still serving that same stuff. The only difference is my kids and hubby like it and we have it throughout the year.
But there is a better option! When I can get fresh cranberries I make homemade Cranberry Orange Compote. Not only does it make Thanksgiving a little more special, it does not contain any mystery ingredients that I am happy ignoring on the label of a can of cranberry jelly.
