This time of year everyone is busy making cookies. While I like the traditional cookies, I also like to add some not so traditional cookies to my mix. With the help of my hubby, I modified my regular chocolate chip cookie recipe to make White Chocolate Cranberry Cookies. These are a year round hit, but at Christmas time we get to count them as healthy because they have fruit in them.
White Chocolate Chip Cookies
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup margarine softened
1/2 cup shortening
1 cup packed light brown sugar
1/2 cup sugar
2 teaspoons vanilla
1 12 oz. package of white chocolate chips
1 cup dried cranberries (about 4 oz.)
In a medium bowl combine first three ingredients and set aside.
With an electric mixer beat margarine and shortening for 30 seconds until combined. Add sugars and beat until fluffy. Add eggs and vanilla. Slowly add flour mixture until well combined. Stir in chocolate chips and cranberries just until combined, you don’t want to break them up.
Drop from a teaspoons onto an ungreased cookie sheet and bake at 375 for 8-10 minutes
