Slow-cooker Country Ribs

I love spring. The weather is turning warmer and we can pull out the grill to cook. However, spring is also full of surprises and crazy weather patterns. While nothing beats the taste of BBQ ribs from the grill. One has to be prepared to cook them inside when mother nature does not cooperate.

Pork country-style ribs can be cooked in the slow cooker with great results. While this is not one of those recipes where you throw everything in the pot and let it go, the extra steps give you a better rib. They are full of flavor and with a perfect texture, tender with a little bit of crispness on the outside.

Corn Chowder

Last year I received a collection of recipes from my husband’s aunt. There were a lot of family favorites that I have used and a few that I had not seen.  One was for Corn Chowder.  It sounded great, so we gave it a try. I tried tweaking the recipe several times, but it still was off. So I started searching and found a couple of different recipes.  I combined them, and added some seasoning. I must say after making my version twice now, my family likes it better than the old family recipe. Shhh… don’t tell anyone.

Pasta Primavera

Foods we enjoy as adults depends greatly on what we ate growing up. When my husband and I got married he did not eat many vegetables. This was due to the fact his mother always cooked them until they were mushy.

Cauliflower is one of the vegetables he refused to eat. One day several years ago we had a disagreement about different taste in foods. He agreed to eat whatever I fixed that night for dinner. I made Pasta Primavera. He now will eat cauliflower in this dish and even requests that I make it.

This recipe is quick and easy to make. In the time it takes to cook spaghetti noodles, dinner is ready.
