White Chocolate Cranberry Cookies

This time of year everyone is busy making cookies.  While I like the traditional cookies, I also like to add some not so traditional cookies to my mix. With the help of my hubby, I modified my regular chocolate chip cookie recipe to make White Chocolate Cranberry Cookies. These are a year round hit, but at Christmas time we get to count them as healthy because they have fruit in them.

Recipe Cards

Where do you go for your favorite recipes?

Once we would go to our trusty recipe box, now we spend hours hunting for them on the internet and pinterest, hoping that when we want them we can find them again. Many of us, including myself still have a recipe box that we use. I spent some time this past weekend trying to update mine with those recipes that my family likes. I am fortunate that my husband and kids like to cook and often do, but they only use the recipe box and without recipes it makes it harder for them/me.

Well this got me thinking… would you like the recipes I shared already typed up onto recipe cards so all you have to do is print them? I spent some time typing them all up for you. All you have to do is print them onto card stock and cut them out. Each page has two recipes the top one is 4×6 and the bottom one is 3×5 so they will fit most boxes that are out there. I hope this helps you. So take a few minutes and go back and look over the recipes that I have posted and print your favorite recipes and add them to your recipe box.

Oatmeal Cookies

Do your kids love to help cook? Does having them “help” only lead to more problems.  Well, I have found a solution. Here is an easy recipe for oatmeal cookies. My kids love these and they can make them all by themselves.  All they have to do is measure the ingredients and then use their hands to mix it all up.  My oldest niece recently came for a visit so I sent the three kids to the kitchen to make cookies.

EASY OATMEAL COOKIES

1 cup brown sugar
2 cups quick oats
1 cup butter
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
Place all ingredients in a large bowl and mix with your hands. Form dough into small balls and place on an ungreased cookie sheet. Flatten each ball slightly with the bottom of a glass dipped in granulated sugar. Bake at 325 for 8-10 minutes.

NOTE:
*Do not use low-fat margarine it will not work.
*These are great with even young children, most seem to enjoy getting their fingers messy.

Lemon Meringue Cookies

Previously I posted about one of my favorite Christmas cookies, Meringue Cookies. I decided to try something a little different with the basic recipe and make Lemon Meringues.  I still have not decided which one I like better. But regardless to which ones you choose to make they both go great with a spot of tea.

Lemon Meringue Cookies
2 egg white at room temperature
1/2 t cream of tarter
1/4 t lemon extract
1/2 t lemon zest
1/2 c sugar
Beat egg whites to a soft peak, while beating add cream of tarter and lemon extract.  Add lemon zest. Slowly add sugar. Pipe onto parchment lined baking sheet. Bake 1 hr 20 min at 200. Turn off oven (don’t open the door) and leave in for 1 hour to crisp.
