Home-style Meat and Potatoes

I love being able to provide my family a home cooked meal that is easy to prepare, well-balanced and they all love.

My home-style meat and potatoes is just that.  It is also ideal to take to someone after having a baby or re-covering at home.  One pan contains potatoes, hamburger patties and green beans.

Hamburger Vegetable Soup

For all you foodies out there, yesterday was National Homemade Soup Day. On a cold winter day, nothing is better than a bowl of homemade soup.

A family favorite around my house is Hamburger Vegetable Soup. It has enough meat to keep the hubby happy and lots of vegetables (carrots, corn, green beans, peas, and celery). I love the recipe because I can throw it in the slow-cooker and have dinner on the table when the hubby gets home from work.

1 lb. of ground beef – browned

2 cups water

6 beef bouillon cubes

1 large can (28 oz) crushed tomatoes

1 small onion diced

1/2 cup diced celery

1 10oz package of frozen mixed vegetables

1 clove of garlic minced

1 teaspoon of oregano

1/8 teaspoon of pepper

Dissolve bouillon in water. Add all ingredients to slow cooker. Cover and cook on low for 5 hours.

The next time the weather is cold and rainy, mix up a batch of Hamburger Vegetable Soup and stay warm.

Here is the recipe card (Hamburger Vegetable Soup)  to add to your collection.

Slow-cooker Chili

Brrrrr. It is cold outside! Here in Florida we will barely get above freezing. On days like today, I am thankful to be able to stay at home and not have to get out and face the elements. Yes, I know that it is colder in other parts of the country, but one month ago it was 85 and I was wearing shorts and flip-flops.  I know, I know, pull up my big girl panties and deal with it.

Now back to the topic at hand…

It is time to make something for dinner that will warm you from the inside out. I have two options for you. The first is Gumbo that was originally posted last year. I also have a new recipe for you today – Chili.  Now, I am not talking about “five-alarm” chili that burns on the way down, but a mild to medium heat chili.

This is my take on my mom’s chili. I am not sure where the recipe originally came from. Continue reading “Slow-cooker Chili”
