Peanut Butter Cookies are my dad’s favorite. The smell of freshly baked cookies can call him from miles away. He seems to know just the right time to show up whenever I bake Peanut Butter Cookies.
PEANUT BUTTER COOKIES
1 1/4 cup flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup margarine
1/2 cup crunchy peanut butter*
3/4 cup sugar divided
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
In a medium bowl whisk together dry ingredients (flour, baking soda, and salt). In a mixer bowl, beat margarine for 30 seconds. Add peanut butter 1/2 cup sugar, and brown sugar. Mix until fluffy. Add egg and vanilla. Mix well. Slowly add dry ingredients. Mix until combined. Refrigerate for 2 hours. Shape dough into one-inch balls and roll in 1/4 cup sugar. Place on an un-greased cookie sheet and use a fork to create hash marks. Bake at 375 for 10 minutes. Allow to cool slightly (1-2 minutes) before removing them from the pan.
TIPS: Personally, I like crunchy peanut butter best, but it can be made with creamy peanut butter. I often freeze half of the cookie dough and am able to bake them up at a later date. Just allow the dough to thaw for 30 minutes on the counter (or overnight in the fridge).
