We all have our favorite comfort foods. One of mine is meatloaf with mashed potatoes. There is just something about this dish that brings me back to my childhood and simpler times.
Before we begin, let me say that this is not one of those “ultra-healthy dishes”, and while ground turkey will work, it does lose the comfort factor that we all crave.
MEATLOAF
1 1/2 pound ground beef
2 eggs
3/4 cup milk
1 Tablespoon Worcestershire sauce
1/2 cup bread crumbs
2 Tablespoon dried onion
1 Tablespoon parsley
8 oz can tomato sauce
2 Tablespoons brown sugar.
In a large bowl, whisk together eggs, milk, and worcestershire sauce. Add bread crumbs, onion and parsley. Mix until combined. Add meat and mix again. Shape into a loaf pan. Combine tomato sauce and brown sugar in a small bowl. Pour half of the tomato mixture over the uncooked meatloaf and bake at 350 for 70 minutes. Drain excess grease from the pan. Top with remaining tomato sauce and bake another 10 minutes. Allow to rest 5 minutes before serving.
TIPS: Yes you can use whole wheat bread crumbs (I have found no difference in taste). You can also use 1/4 cup fresh chopped onion in place of dried onions.
