Fresh asparagus is a family favorite. While it is usually a winter vegetable, I found it on sale the other day and grabbed a pound. Roasted asparagus is very easy to make and adds a touch of class to any meal.
ROASTED ASPARAGUS
1 lb fresh asparagus
1 Tablespoon olive oil
Kosher salt
Wash asparagus and break off the hard tips. Toss with approximately 1 Tablespoon of olive oil (just enough to coat). Place on a foil lined baking sheet in a single layer. Sprinkle with salt.
Bake at 350 for 15 -20 minutes until tender. The time needed will vary by the thickness of the asparagus sprouts.
TIP: While it is not necessary to line the baking sheet with foil, it does aid in clean-up.
