Chocolate Bacon Cupcakes with Maple Syrup Frosting

There is something about bacon that we all love. Recently I made Chocolate Bacon Cupcakes with Maple Syrup Frosting. Sweet + Salty + Smokey = YUMMY.

STEP 1: MAKE THE CUPCAKES – I began by making a batch of chocolate cupcakes straight from a box, nothing fancy.

STEP 2: BACON  While they were cooling, I took half a package of bacon and cut it into approximately 4 inch strips and cooked each piece of bacon until it was crispy. I drained them on a paper towel and set aside

STEP 3: FROSTING   For the frosting I used my standard Decorator’s Frosting Recipe (first posted here) and created maple syrup frosting (recipe below). It was very easy, I just used maple extract in place of my usual flavoring and we now have frosting that was reminiscent of pancake syrup.

STEP 4: ASSEMBLE   Using a #10 decorators tip, I piped the frosting on the top starting on the outside edge working my way in. Then I topped each cupcake with a piece of bacon.

STEP 5: ENJOY  These were a huge hit and did not last long

 

MAPLE SYRUP FROSTING
1 cup shortening
1/2 cup cake flour
Up to 2/3 cup water less 1 Tablespoon
1/2 teaspoon salt
2 lbs. confectioner sugar
2 teaspoons maple extract

 
Sift cake flour before measuring.

Using an electric stand mixer, combine shortening and cake flour until smooth. Add water, salt and flavoring. Then add sugar slowly on medium-low speed.
