My Grandmother’s Peach Cobbler

My grandmother was an amazing cook. Of course my grandfather taught her how to cook and when they got married, she could not boil water (her words, not mine). Never the less, I always remember her as a great cook. Her table was always overflowing with fresh vegetables from their garden, and dessert was always close by.Peach cobbler

Years ago she gave my mom her cobbler recipe, which was passed down to me when I got married. The original recipe said to cook in a modest oven until done. Don’t you love recipes like that.

Her recipe is a little different from most cobbler recipes. You assemble it upside-down. The crust goes in first, then you add the peaches.  During the cooking process the crust will rise to the top and cover the peaches.  It may seem odd, but trust me – it works.

Green Stuff

Have you ever seen a recipe, and thought “NO WAY”. Well, today I would like to share one of those type recipes. Growing up, my mom made a green gelatin salad every year for Christmas. Thankfully as a kid I did not realize what was in it, or I may not have eaten it. Cottage cheese and lime jello, are not a combination I would have tried.

We called it “green stuff”. When my mom gave me the recipe before I got married the recipe card said “green stuff”. I guess it is because my sister and I could not pronounce the word congealed or gelatin, who knows. But to help you I will call Green Gelatin Salad.

I’m not sure why we only had it at Christmas, I think it goes great for St. Patrick’s Day. I have found that green deserts are a little hard to find.

King Cake

Mardi Gras has come and gone once again.  And the remains of the King Cake are almost gone. King Cake is not only a great dessert, it also makes a delightful breakfast. The only problem is Fat Tuesday, leads to Fat Wednesday, Fat Thursday, Fat Friday… you get the picture. This is not a light, diet-friendly recipe. But then again, you only live once and Mardi Gras is only once per year.

Peanut Butter Fudge

Tomorrow, March 1st, is National Peanut Butter Lover’s Day. I have to admit that I crave peanut butter, the only problem is that I have found the peanut butter triggers my migraine headaches so I try to resist whenever I can. Peanut Butter Fudge can really test the limits of my will-power. However, my family loves it and I so usually I will make it along with my chocolate fudge (recipe found here).
