When it comes to breakfast foods, I love my sweets. Ok! I love sweets all times of the day and suffer from a chronic sweet tooth! French toast is one of my favorites, but a good French Toast is hard to find. Continue reading “French Toast”

Caramel Macchiato on a Budget
My hubby’s favorite drink at Starbucks is a Caramel Macchiato. According to the Starbucks website, it includes a “creamy vanilla-flavored syrup, freshly steamed milk with a topping of velvety-rich foam, an intense hit of our Espresso Roast, a finishing of buttery caramel drizzle”.
My husband has found an alternative to this pricy drink, that provides him with the same caramel taste but for a fraction of the cost.
Begin by brewing a pot of coffee. Before you pour your coffee add one Cadbury Caramel egg to the bottom of a large cup. Top off the cup with coffee and stir until the egg is dissolved.
In full disclosure – I have not tried this recipe. I personally cannot stand coffee, but my hubby loves it and this will be the third year that he has enjoyed this.
Quiche Lorraine
Do you remember the book Real Men Don’t Eat Quiche from the 80’s? The book is supposed to be a guidebook to all things masculine. First, I have never read the book. Secondly, quiche is not a girly food. All the “real men” in my life eat it. Quiche is just an omelet in a crust.
Quiche Lorraine is my husbands favorite.
King Cake
Mardi Gras has come and gone once again. And the remains of the King Cake are almost gone. King Cake is not only a great dessert, it also makes a delightful breakfast. The only problem is Fat Tuesday, leads to Fat Wednesday, Fat Thursday, Fat Friday… you get the picture. This is not a light, diet-friendly recipe. But then again, you only live once and Mardi Gras is only once per year.
Pancakes, it’s whats for dinner
Recently we went and picked a gallon of blueberries. Blueberries are one of my favorite fruit. And they are easy to store for later use.
To freeze fresh blueberries, place on a cookie sheet covered with wax paper and place in freezer for 4 hours. Then move to zipper storage bags for later use. When you are ready to use them, then you wash them. It is important not to wash them before hand.
After picking blueberries we came home and made blueberry pancakes. I know that there are lots of different ways to make blueberry pancakes. I have found that if you add the blueberries directly into the batter the last pancakes cooked not have many berries. And if you stir the batter to much then they tend to break up and the batter turns a funny off-gray color. To avoid these problems I make my plain batter, then after I have poured the pancakes onto the griddle I add the blueberries.
BLUEBERRY PANCAKES
2 1/2cup all-purpose flour
1/4 cup sugar
4 teaspoons baking powder
1 teaspoon baking soda
2 eggs beaten
2 cups milk
2 Tablespoons vegetable oil
2 teaspoons lemon juice
2 cups blueberries
Combine dry ingredients. In a separate bowl blend wet ingredients. Add wet ingredients to dry ingredients. Stir until blended (batter will be slightly lumpy).
Pour 1/3 cup of batter onto heated griddle or non-stick skillet. Add a hand-full of berries to each pancake. Turn pancakes over once the edges begin to dry out and the bottoms are golden.
